Sourdough Discard Cheese Crackers

Ingredients
  

  • 1 cup sourdough discard
  • 1 cup sharp cheddar cheese, finely shredded
  • 4 tbsp unsalted butter, softened
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika

Method
 

  1. Beat the softened butter and shredded cheddar together until well combined.
  2. Mix in the sourdough discard until smooth.
  3. Add the flour, salt, garlic powder, and paprika, and mix until a soft dough forms.
  4. Shape into a disc, wrap, and chill for at least 30 minutes.
  5. Roll out to about 1/8 inch thick on a floured surface and cut into 1-inch squares. Poke each one once with a fork.
  6. Preheat the oven to 375°F (190°C) and bake on a parchment-lined sheet for 14 to 18 minutes, until golden and firm.
  7. Cool completely on the pan before storing.

Notes

If you want these extra sharp, add a couple tablespoons of finely grated Parmesan along with the cheddar — it pushes the flavor closer to the boxed version people grew up on. I've also swapped in pepper jack for a spicier version, which disappears fast whenever I bring it to a potluck.
