Sourdough Garlic Bread

Buttery, garlicky sourdough bread finished under the broiler until golden, with an easy path to a cheesier version if you want it.

Ingredients
  

  • 1 whole day-old sourdough loaf, split lengthwise
  • 115 g (1/2 cup) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 Tbsp fresh parsley, chopped
  • 30 g (1/4 cup) parmesan, finely grated
  • 0.5 tsp fine sea salt
  • 0.25 tsp red pepper flakes, optional

Equipment

  • Baking sheet
  • Small mixing bowl
  • Butter knife or offset spatula

Method
 

  1. Mash together the softened butter, garlic, parsley, parmesan, salt, and red pepper flakes if using.
  2. Slice the loaf in the desired thickness and place cut-side up on a baking sheet.
  3. Spread the garlic butter evenly over the top cut sides.
  4. Bake at 375°F (190°C) for 10-12 minutes, until edges turn golden.
  5. Broil 1-2 minutes, watching closely, until golden brown in spots.
  6. Let rest 2-3 minutes, then cut in the desired size and serve warm.

Notes

For a cheesier version, sprinkle mozzarella over the butter before the final broil. Watch closely under the broiler - it burns quickly.
