Sourdough Discard Pancakes

Ingredients
- 1 cup sourdough discard (unfed)
- 1 cup all-purpose flour
- 1 large egg
- 1 cup buttermilk
- 2 tbsp melted butter
- 2 tbsp granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- Butter or oil, for the pan
Instructions
- Whisk discard, egg, buttermilk, and melted butter together in a large bowl.
- In a separate bowl, whisk flour, sugar, baking soda, and salt.
- Fold dry ingredients into wet just until combined — a few lumps are fine.
- Rest the batter 10 minutes while your griddle heats over medium heat.
- Cook ¼-cup portions on a lightly greased griddle, flipping once bubbles form and edges set, about 2–3 minutes per side.
- Serve warm with butter and syrup.
